WINTER IN MIDDLE EARTH
With the cold days and long nights of winter coming upon us, let us imagine the hearty and rustic fare that would warm tables across JRR Tolkien’s Middle Earth. As the nights lengthen and the days grow dark, we can wonder at what foods would be served in the great halls of the Dwarven kings or at the lavish feast tables of the Elven kingdoms. What delicacies would be served by the hobbits, snug in their cozy hobbit holes as the winds of winter howl across the land? Let us explore together some of the culinary delights from different lands for a Winter Feast in Middle Earth.
In Lothlorien
Journey east of the Misty Mountains to the enchanting Golden Wood, home of Galadriel, Lady of Lorien. With winter closing in, the woodland realm of Lothlorien is perfect for a respite from the harsh, cold climate. This golden hued elixir, flavoured with sweet honey and woodsy sage, draws inspiration from Galadriel’s famous golden locks and the ethereal forest she rules over. Raise a glass of this sweet honey sage elixir in honour of the enchanting Lady of the Wood.
Ingredients
Calvados apple brandy: Apple brandy adds a fruity sweetness to this delicate cocktail. I prefer using Calvados, an apple brandy originating from Normandy, France.
Gin: The botanicals in gin make it a great choice in this herb infused cocktail. I used the French gin Citadelle, however, you can use any gin you prefer.
Honey: Adding straight honey to a cocktail can be difficult, it doesn’t dissolve easily into the cold liquid. However, a honey simple syrup will mix into the cocktail easily.
Sage: Fresh sage is used in both the simple syrup and muddled in the shaker.
Lemon juice: A splash of lemon juice adds a balancing acidity.
How to make Honey Sage Cocktail
Make the honey sage syrup
In a saucepan combine the water and honey. Place over high heat and bring to a simmer. Stir occasionally to completely dissolve the honey. Twist the fresh sage leaves, bruising them to release more flavour, and add to the syrup. Bring to a simmer, then remove from the heat, cover, and let steep for 20-30 minutes.
Strain the syrup and discard the sage leaves. Let the syrup cool before using. The syrup will keep for 2 to 3 weeks in the fridge.
Make the Honey Sage Cocktail
In a cocktail shaker add the apple brandy, gin, honey sage simple syrup, and lemon juice. Tear 2 or 3 sage leaves into a few pieces and add to the shaker. Add ice, then cover and shake for 10 to 15 seconds. Strain into a coupe glass. Garnish with fresh sage leaves and enjoy!
