Wendy’s Banana Pikelets

Today, her culinary magic takes the form of delicate banana pikelets with a caramelized banana topping.
I suppose it was all especially entrancing to Wendy, because those rampagious boys of hers gave her so much to do. Really there were whole weeks when, except perhaps with a stocking in the evening, she was never above ground. The cooking, I can tell you, kept her nose to the pot.

How to Make Wendy’s Teatime Banana Pikelets
Make the batter
In a mixing bowl, mash one banana with a fork until smooth. Add the egg and milk and whisk together. Add the flour, sugar, baking powder, and salt and whisk just until combined.
It’s ok if the batter is a little lumpy. Let sit for 10 to 15 minutes.
Make the caramelized banana topping
Slice the remaining bananas and set aside.
In a non-stick skillet heat the butter over medium until it melts. Add the brown sugar and heavy cream and whisk together. Bring the caramel up to a boil and then lower the heat. Add the banana slices and cook in the caramel sauce for 2 to 3 minutes until they begin to soften but before they break down. Remove from the heat and set aside until serving.
Cook the pikelets
To cook the pikelets, begin by adding a teaspoon of butter to a large non-stick skillet. Place over medium heat. Once the butter melts, use a paper towel to wipe the butter around the pan before wiping it clean. This will promote even browning of the pikelets.
Drop spoonfuls of the batter into the skillet, using about 2 tablespoons of batter per pikelet. Cook the pikelets until bubbles form on the surface and they are browned on the bottom. Flip the pikelets and cook until golden brown on the other side and they are fully cooked.
Transfer the cooked pikelets to a plate and cover with foil to keep warm. Repeat with the remaining batter until all of the pikelets are cooked.
Serve Wendy’s Teatime Banana Pikelets
Rewarm the caramelized bananas if necessary. Serve the pikelets with a generous topping of the warm caramelized bananas. Enjoy!
