A summer cordial

Brian Jacques’ elaborate descriptions of the feasts of Redwall provide much inspiration for this summer feast. Ripe, seasonal strawberries are the perfect juicy berry for this sparkling beverage that can be made either alcoholic or non-alcoholic. Black peppercorns step in for the beloved Redwall spice hotroot to add a subtle heat to this refreshing summer beverage.

Ingredient Notes

Strawberries: While fresh, seasonal strawberries are always the best, you can certainly use frozen strawberries instead if needed.

Black pepper: One of the most popular spices in Redwall cuisine is the spicy hotroot. Whole peppercorns stand in for that Redwall delicacy and add a hint of spice to this cordial. They can be omitted if you prefer.

Mint: Fragrant fresh mint leaves are the perfect garnish for this summery beverage.

Sparkling beverage: This drink can be made with or without alcohol. I prefer using a sparkling wine like prosecco, but you could certainly use club soda or a sparkling water instead.

How to Make Sparkling Strawberry Cordial

Make the strawberry hotroot syrup

In a small saucepan combine the water, sugar, sliced strawberries, and peppercorns over medium heat. Cook, stirring occasionally, until the syrup comes to a simmer. Turn the heat down to maintain a low simmer for about 5 minutes.

Turn off the heat, cover, and let the syrup steep for half an hour. Strain the syrup through a fine wire mesh strainer, gently pressing the solids to drain all the syrup. Let the syrup cool and then chill until you’re ready to use. The syrup will last for 2 to 3 weeks in the fridge.

Serve the Sparkling Strawberry Cordial

Fill a cocktail glass with ice. Add the strawberry hotroot syrup to the glass. Top with the sparkling wine or club soda. Garnish with a lemon slice and a generous sprig of fresh mint. Enjoy!

Strawberry Hotroot Syrup

  • 1 ½ cups water
  • 1 ½ cups sugar
  • 3 cups sliced strawberries
  • 2 tsp whole black peppercorns, optional

  • 1 ½ – 2 oz Strawberry Hotroot Syrup, to taste
  • Prosecco or club soda
  • fresh min leaves, for garnish
  • lemon slices, for garnish
