Arguably, Elspeth Catton’s most iconic look is her in a lavender shimmery gown, sipping what may be an Aviation cocktail as she converses with Oliver in the Saltburn gardens. In this scene, as Oliver surreptitiously gathers information from Elspeth while laying the groundwork for his infiltration of the Catton family, Elspeth’s character is on full display. Regal, feminine, bohemian, eccentric and cold-blooded.

Taking inspiration from the Aviation cocktail, Elspeth’s style and gentility, and the English gardens that adorn Saltburn, this floral tipple is the perfect movie inspired cocktail to make for your next Saltburn movie night.
Ingredient Notes
Crème de Violette: The Aviation cocktail was popular in the early 20th century but became elusive and sought after as Creme de violette was nearly impossible to find. That unattainable quality, reserved for those with means, makes crème de violette an essential component of Elspeth’s cocktail. After decades of unavailability, this violet flavoured liqueur burst back onto the scene in the early 2000’s with several brands currently available. I like using Giffard but Rothman & Winter is an excellent option as well.
Butterfly pea flower gin: Capture the colour of Elspeth’s iconic dress with this unique and colourful gin. Introducing acid to the gin changes it from a deep indigo blue to a light pinkish purple. My favourite butterfly pea flower gin is Empress which is a local gin made on Vancouver Island here in British Columbia.
Dry vermouth: Vermouth is a fortified wine. It is infused with various botanicals and can be both dry and sweet. For this cocktail, choose a dry vermouth, such as Martini & Rossi.
Lavender bitters: Infused with delicate lavender aroma, a few dashes of bitters will add complexity and depth to this cocktail.
Lemon: I use a small amount of lemon in this cocktail since there is no added simple syrup.
How to Make Elspeth’s Cocktail
In a cocktail shaker add the crème de violette, butterfly pea flower gin, dry vermouth, lemon juice, and lavender bitters. Add ice, then cover and shake for 10 to 15 seconds. Strain into a coupe glass and absolutely no garnish – we don’t want to look like we’re trying too hard.
