Every journey to Neverland follows the same twinkling night path – second star to the right, and straight on ‘til morning. And so must we as we travel to Neverland in search of a feast!
This Neverland-inspired cocktail is reminiscent of the night sky in colour. It combines the delicate tropical flavours of passion fruit, coconut and blue curaçao. This delightful concoction evokes the vibrancy and exotic nature of Neverland, its lush tropical landscapes, and the dreaminess and serenity of the enchanted world, one sip at a time.
One taste of the Second Star to the Right, and a good sprinkling of Tinkerbell’s fairy dust, will transport you to Peter Pan’s fantastical island.
Ingredient Notes
Passion fruit liqueur: Luscious passion fruit liqueur captures the bright, tangy freshness of this popular tropical fruit. There are several brands on the market, from Brazilian brand Passoã to Bols and Giffard. Add a burst of aromatic tropical fruit flavour to this tropical tipple.
Blue curaçao: Curaçao is a bitter orange flavoured liqueur that is a common ingredient in tropical cocktails. While curaçao is generally colourless in appearance, some varieties are coloured blue to give an exotic appearance. Bols blue is a popular brand that is widely available.
Coconut rum: A splash of coconut flavoured rum rounds out the blend of tropical flavours in this delightful cocktail.
Simple syrup: This is a strong cocktail, and a little simple syrup and lime juice goes a long way to smoothing out those strong alcoholic flavours.
Lime juice: Fresh lime juice adds a balancing acidity to this sweet cocktail.
Pineapple or star fruit: Garnish this enchanting cocktail with a fresh fruit star. When in season, star fruit makes the perfect choice. However, if you can’t source star fruit, then use a slice of fresh pineapple to cut out a star for garnish.
How to Make the Neverland Cocktail
To make the simple syrup, combine the water and sugar in a small saucepan. Place over medium high heat and bring to a simmer, stirring until the sugar is completely dissolved. Once the sugar is fully dissolved, remove from the heat. Let cool before using. Simple syrup will keep for 2 to 3 weeks in the fridge.
In a cocktail shaker add the passion fruit liqueur, blue curaçao, coconut rum, simple syrup and lime juice. Add ice, then cover and shake for 10 to 15 seconds. Strain into a coupe glass. Garnish with a slice of pineapple cut into a star shape, or if in season, a slice of star fruit. Enjoy!
