Ingredients

Lamb: This recipe is made using fresh or frozen ground lamb. Thaw the lamb if frozen.

Fresh herbs: This tangy, vibrant green sauce gets its flavour from a blend of fresh herbs. I like using a blend of parsley, cilantro, and mint leaves.

How to Make Herbed Lamb Sausage with Green Sauce

Make the green sauce

In a blender, combine the parsley, cilantro, and mint leaves. Add the garlic, yogurt, olive oil, lemon juice, kosher salt and pepper. Blend until smooth. If there isn’t enough liquid to blend the sauce smoothly, add water, a tablespoon at a time, until it blends into a sauce. Taste and adjust the seasoning. Set aside.

Make the sausage patties

To make the sausage, crumble the ground lamb into a mixing bowl. Add the chopped parsley, cilantro, and mint along with the minced garlic, kosher salt, paprika, and pepper. Mix just until combined. Form into twelve thin patties. The patties will constrict while cooking so be sure to make them fairly thin.

Serve the Herbed Lamb Sausage with Green Sauce

Heat a skillet over medium high heat. Add olive oil and fry the sausage patties in for 3 to 5 minutes per side until fully cooked. Serve the lamb sausage patties with fried eggs and the green sauce. Enjoy!

Servings 4 servings

Ingredients 

Green Sauce

  • 1 cup fresh parsley leaves
  • 1 cup fresh cilantro leaves
  • ½ cup fresh mint leaves
  • 2 garlic cloves, minced
  • ¼ cup plain yogurt
  • 4 tbsp olive oil
  • 3 tbsp lemon juice
  • ¾ tsp kosher salt
  • ¼ tsp pepper

Herbed Lamb Sausage

  • 1 lb ground lamb
  • 1 tbsp each chopped fresh parsley, cilantro, and mint
  • 1 garlic clove, minced
  • 1 tsp kosher salt
  • ½ tsp paprika
  • ¼ tsp pepper

To Serve

  • 1 tbsp olive oil
  • 4 eggs, to serve
