Sweet cherries are gently cooked and then flambéed with a generous splash of kirsch with the striking flames an homage to our murder weapon, the candlestick. The subtle almond flavour of the amaretto ice cream pairs perfectly with the cherries. This classic and theatrical dish represents the dangerous beauty and elegance of the enigmatic Miss Scarlett.
Ingredients
Cherries: This recipe was developed using frozen, pitted dark cherries. They are readily available year round in most grocery stores. When in season, fresh dark cherries would also work well, although the cooking time may need to be adjusted.
Kirsch: Also called kirschwasser, kirsch is a brandy made from cherries. If you can’t source kirsch, regular brandy makes an acceptable substitute.
Amaretto: A shot of amaretto liqueur along with almond extract gives this ice cream its distinctive almond flavour. Make this ice cream alcohol free by omitting the amaretto and adding an extra 1/2 tsp almond extract.
How to Make Cherries Jubilee with Amaretto Ice Cream
Make the amaretto ice cream
In a mixer, beat the whipping cream with a whip attachment until it reaches soft peaks. Add the sweetened condensed milk and beat until stiff peaks. Add the amaretto and almond extract and mix just until combined.
Transfer the mixture to a freezer-safe container. Freeze overnight until firm.
Make the cherries jubilee
In a stainless skillet, melt the butter over medium high heat. Add the cherries and their juices along with the sugar and lemon juice. Bring to a simmer and cook for 3 to 5 minutes until the cherries are softened.
To flambé the cherries, have a lighter or matches nearby. Pour the kirsch over the cherries and use a lighter to ignite the alcohol. Gently swirl the cherries in the pan and allow the flames to burn out on their own.
In a small cup combine the cornstarch and water. Add the cornstarch slurry to the cherries and cook until slightly thickened.
Serve the Cherries Jubilee with Amaretto Ice Cream
Scoop portions of the amaretto ice cream into serving bowls. Top with the warm cherries and serve immediately. Enjoy!
