In a saucepan combine the water and honey. Place over high heat and bring to a simmer. Stir occasionally to completely dissolve the honey. Twist the fresh sage leaves, bruising them to release more flavour, and add to the syrup. Bring to a simmer, then remove from the heat, cover, and let steep for 20-30 minutes.
Strain the syrup and discard the sage leaves. Let the syrup cool before using. The syrup will keep for 2 to 3 weeks in the fridge and will make about 7 cocktails.
Winter Honey Sage Syrup
In a cocktail shaker add the apple brandy, gin, honey sage simple syrup, and lemon juice. Tear the sage leaves into a few pieces and add to the shaker. Add ice, then cover and shake for 10 to 15 seconds. Strain into a coupe glass. Garnish with fresh sage leaves and enjoy!
