Whipped Feta with Honey and Walnuts

Servings 2 cups

Ingredients 

  • 8 oz cream cheese, softened
  • 8 oz feta cheese, crumbled
  • 2 tbsp chives, finely chopped
  • cup honey
  • ½ cup walnuts, chopped
  • kosher salt and pepper
  • extra chives, for garnish
  • baguette slices or pita wedges, to serve
  • extra walnut halves, to serve

Instructions 

  • Place the softened cream cheese and crumbled feta cheese into a food processor. Blend the two cheeses together, stopping to scrape down the sides periodically. Continue blending until the whipped feta is smooth and creamy. It will be thick in the beginning but become creamy after it's whipped for a couple of minutes.
  • Taste the whipped feta to check if it needs any salt. Add the chives, pepper to taste, and kosher salt if needed. Pulse to blend. At this point you can refrigerate the whipped feta to use later.
  • Scrape the whipped feta onto a serving plate and spread it out forming dips and peaks. If your honey is too thick to pour then gently heat it up in the microwave for a few seconds just until it's pourable.
  • Drizzle the honey over the whipped feta and sprinkle with the chopped walnut and extra chopped chives.
  • Serve with sliced baguette or pita wedges and extra walnut halves!
