Rosemary Aperol Spritz

Ingredients 

Rosemary Simple Syrup

  • 1 cup sugar
  • 1 cup water
  • 4 sprigs fresh rosemary

Rosemary Aperol Spritz

  • 1 ½ oz Aperol
  • 1 oz Rosemary Simple Syrup
  • 3 oz Prosecco, see note
  • 1 oz sparkling water, see note
  • fresh orange slices, for garnish
  • extra rosemary sprigs, for garnish

Instructions 

Rosemary Simple Syrup

  • In a small saucepan over medium heat, combine the sugar and water. Bring to a simmer, stirring until the sugar is dissolved. Add the fresh rosemary and turn the heat down to low. Simmer for 2 minutes and then remove from the heat. Cover and let the rosemary steep for 30 minutes.
  • Strain the simple syrup and discard the rosemary. Cool completely before using.

Rosemary Aperol Spritz

  • Fill a wine glass half full with ice cubes. Add the Aperol and the rosemary simple syrup. Top with the Prosecco and a splash of sparkling water. Garnish with a slice of fresh orange and another sprig of rosemary. Enjoy!

Notes

Note: I typically don't measure the Prosecco and sparkling water when making this drink. The measurements given will yield the correct ratio for the drink if you prefer to measure.
