Pat the ham steak dry with paper towels. Place a wide skillet over medium heat. Add 1 tablespoon butter and allow to melt. Add the ham steak and cook for 4 to 6 minutes, turning occasionally, until the ham is heated through and beginning to brown. Remove the ham to a plate and cover to keep warm.
Turn the heat down to medium low. Add the remaining 2 tablespoons butter along with the lemon juice, Dijon mustard, and horseradish. Stir together until the butter melts. Add the brown sugar, kosher salt, pepper, and cayenne. Cook for another minute until the glaze is syrupy.
Return the ham steak to the skillet. Flip the ham several times to coat with the glaze. Transfer to a serving platter, pouring the remaining glaze over the ham. Serve with a slice of 'maggoty' molasses oat bread and enjoy!
