Ent Draught

Ingredients 

Cedar Simple Syrup

  • 4 cedar leaf sprigs
  • 1 ½ cups water
  • 1 ½ cups sugar

Ent Draught

  • 1 ½ oz Forest Dweller Gin, or another gin
  • ½ oz dry vermouth
  • 1 oz Cedar Simple Syrup
  • ¾ oz lemon juice
  • 2-3 dashes grapefruit bitters
  • extra cedar leaf sprigs for garnish

Instructions 

Cedar Simple Syrup

  • To prepare the cedar syrup, collect about 4 cedar leaf sprigs. Choose new growth, light green tips if possible. Add the water to a small saucepan. Bring to a boil over medium high heat. As soon as it comes to a boil, add the cedar sprigs and turn off the heat. Don’t let it continue to boil or the water may reduce too much.
  • Cover the saucepan with a lid and let the cedar steep for 30 minutes. After steeping, remove the cedar sprigs and add the sugar. Stir to dissolve, heating the syrup briefly if necessary. Strain the syrup and allow to cool completely before using.

Make the Ent Draught

  • In a cocktail shaker combine the Forest Dweller gin, dry vermouth, cedar simple syrup, lemon juice, and grapefruit bitters. Add ice, cover, and shake for 10 to 15 seconds. Strain into a coupe glass. Garnish with a sprig of cedar if desired and enjoy!
