Baked Oatmeal with Caramelized Apples

Ingredients 

Caramelized Apples

  • 4 apples
  • 4 tbsp butter
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • ¼ tsp kosher salt

Baked Oatmeal

  • 1 ½ cups milk
  • 2 eggs
  • cup brown sugar
  • 2 cups quick cooking oats
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp allspice
  • ¼ tsp kosher salt
  • 4 tbsp butter, melted

Instructions 

Caramelized Apples

  • Peel and dice the apples. Place a skillet over medium high heat. Add the butter and allow to melt. Add the apples to the skillet and let sauté for a couple of minutes until they begin to soften. Stir in the brown sugar, cinnamon and kosher salt.
  • Continue cooking the apples until they are tender. Set aside and allow to cool slightly before proceeding.

Baked Oatmeal

  • Preheat the oven to 375°F. Spray an 11" by 7" baking dish with non-stick spray. Set aside.
  • In a mixing bowl, whisk together the milk and eggs. Stir in the brown sugar. Add the oatmeal, baking powder, cinnamon, allspice, and kosher salt and stir together. Stir in the melted butter along with one third of the caramelized apples.
  • Pour the oatmeal mixture into the prepared baking dish. Bake for 25 to 30 minutes until the oatmeal is set in the middle. Let cool for 5 minutes before serving.
  • Reheat the remaining caramelized apples. Cut the baked oatmeal into portions. Top the baked oatmeal with the warm caramelized apples and enjoy!
