Rosemary Aperol Spritz

Light, bubbly, and aromatic, this twist on a classic Italian Aperol Spritz switches things up with a hint of fragrant rosemary.

The Aperol Spritz is such an iconic Italian drink that I just had to include it on the menu for my Rustic Italian Dinner Party this summer! Some of my favourite memories of Italy are of spending lazy afternoons at ridiculously overpriced cafés on the Piazza San Marco in Venice sipping an Aperol spritz. It’s the perfect way to relax on a hot summer afternoon!

A splash of rosemary scented simple syrup adds another layer of flavour to this classic aperitive. Traditionally an Aperol spritz does not include a simple syrup. By adding the rosemary simple syrup the drink will be slightly sweeter than typical. The combination of orange and rosemary works so well together that I’m sure you’ll enjoy this twist on a classic!

Ingredient Notes

Aperol: With flavours of orange, gentian, rhubarb and cinchona, the slightly bitter flavour of Aperol makes the perfect aperitif to whet the appetite. Its signature bright orange colour is definitely a showstopper.

Rosemary: Be sure to use fresh rosemary to make the simple syrup!

Prosecco: This sparkling wine from Italy is an integral part of an Aperol spritz. Prosecco is a popular wine in Italy and it is often used as an aperitif or in cocktails outside of Italy. It is made from prosecco grapes which were renamed Glera in 2009. The cost of producing Prosecco is relatively low so it’s perfect for when you need to add sparkling wine to a cocktail!

Sparkling Water: A traditional Aperol spritz calls for a splash of sparkling water. I find that the sparkling water lightens the drink, something you may want if you’re drinking them on a hot afternoon. However, I do sometimes skip it. The drink will of course be stronger, so the choice is up to you.

How to Make Rosemary Aperol Spritz

Begin by preparing the simple syrup. You will need to plan ahead so that the syrup has time to cool down before using.

Combine the sugar and water in a small saucepan. Bring to a simmer over medium heat and stir until the sugar dissolves. Add the fresh rosemary sprigs and let simmer for a couple of minutes on low heat. Turn off the heat, cover the saucepan, and let the rosemary steep for 30 minutes. You can leave the rosemary in longer if you wish but keep in mind that it is a strongly flavoured herb.

Strain the simple syrup and discard the rosemary. Cool the syrup to at least room temperature. You can store the syrup in the fridge in a covered container for up to a month. To prepare the rosemary Aperol Spritz, fill a wine glass half full of ice. Add the Aperol, the rosemary simple syrup and top with Prosecco. Add a splash of sparkling water if desired. Garnish with a slice of orange and a sprig of rosemary and enjoy!

Ingredients 

Rosemary Simple Syrup

  • 1 cup sugar
  • 1 cup water
  • 4 sprigs fresh rosemary

Rosemary Aperol Spritz

  • 1 ½ oz Aperol
  • 1 oz Rosemary Simple Syrup
  • 3 oz Prosecco, see note
  • 1 oz sparkling water, see note
  • fresh orange slices, for garnish
  • extra rosemary sprigs, for garnish

Instructions 

Rosemary Simple Syrup

  • In a small saucepan over medium heat, combine the sugar and water. Bring to a simmer, stirring until the sugar is dissolved. Add the fresh rosemary and turn the heat down to low. Simmer for 2 minutes and then remove from the heat. Cover and let the rosemary steep for 30 minutes.
  • Strain the simple syrup and discard the rosemary. Cool completely before using.

Rosemary Aperol Spritz

  • Fill a wine glass half full with ice cubes. Add the Aperol and the rosemary simple syrup. Top with the Prosecco and a splash of sparkling water. Garnish with a slice of fresh orange and another sprig of rosemary. Enjoy!

Notes

Note: I typically don’t measure the Prosecco and sparkling water when making this drink. The measurements given will yield the correct ratio for the drink if you prefer to measure.
