Even the fiercest orc warriors need to start the day right with a hearty breakfast. Though they often have to supplement their diet with foods like ‘maggoty’ bread, a savoury glazed ham steak would satisfy any orc’s craving for meat. The sweet, brown sugar glaze is spiked with fiery horseradish and cayenne pepper for a spicy kick. This sweet and spicy glazed ham steak is the perfect breakfast meat to fuel the hordes of orc warriors in Mordor as they prepare for battle.

Ingredients

Ham steak: Ham steak is typically a cross slice of ham taken from a whole ham leg. This quick cooking meat is perfect for serving 2 to 3 people.

Horseradish: Prepared, grated horseradish adds a spicy kick to the sweet brown sugar glaze. It can be omitted if you prefer.

Cayenne: A pinch of cayenne pepper adds even more heat to this glazed ham. Add as much or as little as you like.

How to Make Sweet and Spicy Ham Steak

Fry the ham steak

Pat the ham steak dry with paper towels. Place a wide skillet over medium heat. Add 1 tablespoon butter and allow to melt. Add the ham steak and cook for 4 to 6 minutes, turning occasionally, until the ham is heated through and beginning to brown. Remove the ham to a plate and cover to keep warm.

Make the glaze

Turn the heat down to medium low. Add the remaining butter along with the lemon juice, Dijon mustard, and horseradish. Stir together until the butter melts. Add the brown sugar, kosher salt, pepper, and cayenne. Cook for another minute until the glaze is syrupy.

Serve the Sweet and Spicy Ham Steak

Return the ham steak to the skillet. Flip the ham several times to coat with the glaze. Transfer to a serving platter, pouring the remaining glaze over the ham. Serve with a slice of ‘maggoty’ molasses oat bread and enjoy!

Glazed Ham Steak

Servings 3 servings

Ingredients 

  • 1 ham steak
  • 3 tbsp butter, divided
  • 1 tbsp lemon juice
  • 2 tsp Dijon mustard
  • 2 tsp prepared horseradish
  • ¼ cup brown sugar
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • ⅛ – ¼ tsp cayenne pepper
  • 'Maggoty' Molasses Oat Bread to serve, *see note

Instructions

  • Turn the heat down to medium low. Add the remaining 2 tablespoons butter along with the lemon juice, Dijon mustard, and horseradish. Stir together until the butter melts. Add the brown sugar, kosher salt, pepper, and cayenne. Cook for another minute until the glaze is syrupy.
  • Return the ham steak to the skillet. Flip the ham several times to coat with the glaze. Transfer to a serving platter, pouring the remaining glaze over the ham. Serve with a slice of 'maggoty' molasses oat bread and enjoy!
