In The Misty Mountains

Journey deep into the Misty Mountains for a hearty breakfast feast worthy of Durin’s folk. Working deep in the cavernous mines of Moria will certainly work up an appetite. Packed with spices, this hearty baked oatmeal is perfect to fuel the long hours spent toiling away in a hunt for treasure deep in the Misty Mountains. Sweet, cinnamon spiced apples are slowly cooked until tender and then baked into the oatmeal. The warm oatmeal is then topped with even more caramelized apples for a sweet and hearty breakfast dish that is sure to please any hard working dwarf.

Ingredients

Apples: I used gala apples in this recipe, however, feel free to use your favourite apple instead.

Oats: This recipe uses quick oats. I prefer the texture of quick oats rather than large flake. While you can use large flake oats, they are chewier and the oatmeal is more crumbly than when using quick oats.

How to Make Baked Oatmeal with Caramelized Apples

Make the caramelized apples

Peel and dice the apples. Place a skillet over medium high heat. Add the butter and allow to melt. Add the apples to the skillet and let sauté for a couple of minutes until they begin to soften. Stir in the brown sugar, cinnamon and kosher salt.

Continue cooking the apples until they are tender. Set aside and allow to cool slightly before proceeding.

Bake the oatmeal

Preheat the oven to 375°F. Spray an 11″ by 7″ baking dish with non-stick spray. Set aside.

In a mixing bowl, whisk together the milk and eggs. Stir in the brown sugar. Add the oatmeal, baking powder, cinnamon, allspice, and kosher salt and stir together. Stir in the melted butter along with one third of the caramelized apples.

Pour the oatmeal mixture into the prepared baking dish. Bake for 25 to 30 minutes until the oatmeal is set in the middle. Let cool for 5 minutes before serving.

Serve the Baked Oatmeal with Caramelized Apples

Reheat the remaining caramelized apples. Cut the baked oatmeal into portions. Top the baked oatmeal with the warm caramelized apples and enjoy!

  • 4 apples
  • 4 tbsp butter
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • ¼ tsp kosher salt

  • 1 ½ cups milk
  • 2 eggs
  • cup brown sugar
  • 2 cups quick cooking oats
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp allspice
  • ¼ tsp kosher salt
  • 4 tbsp butter, melted
